About Butterbing

We make delicious brownie cookies filled with buttercream, known as Butterbings. I started Butterbing in my home in 2014, and it’s been a crazy fast-paced journey ever since! We’re approaching our 5 year anniversary and I’m incredibly proud to say that my team and I have built a business that employs over 20 people, produces 15,000 cookies a week and supplies 500 cafes throughout Australia. It’s a fun job working with the amazing cafes of Australia, and being the happy moment in so many peoples day.

Flavour Frenzy Melbourne Pop-Up

Our Flavour Frenzy pop-up is a very special Butterbing-only bake-sale. Butterbings are normally only available in cafés in 10 different flavours, however Flavour Frenzy is a whole other ball game! We pop-up for an intense two hours, selling 50 amazing flavours directly to the public. This year will be our third Flavour Frenzy. Each Frenzy brings brand new flavours to the table with many of them only available during these two hours. Last year the event attracted over 600 people and sold out within an hour. We’re expecting an even bigger crowd so we’ve more than doubled the amount of Butterbings on offer and the event will be held at Melbourne’s best food truck park and beer garden, Welcome to Thornbury.

Nationwide Café Takeover

This year over 70 cafés are also taking part in the Flavour Frenzy celebrations. We’ve selected 15 super-rare flavours to be sent out to cafés across the country, including cafes in Sydney and Brisbane. Each participating café will have three flavours on sale from Friday 13th September. The official stockist map will be released the night before.

 

How are the flavours made?

I estimate that we have over 100 buttercream recipes in our library now. Typically, if we’re making flavours that are for regular wholesale we have to ensure they appeal to everyone, can be made within a reasonable budget and at a large scale.

That’s not the case with Flavour Frenzy. My team is incredibly talented and passionate and their creations are amazing! My instructions were simply “no rules, no bad ideas and no budget limits”. In addition to our well-loved Buttercreams, you can expect our own recipes of ganaches, jellies, jams, sherbet, multi-layers and special centers. Lots of extra work goes into our Frenzy flavours and these represent a true labor of love.

Many of the recipes use real fruits and spices for authentic flavour, and for those of you looking for a nostalgic childhood experience we’ve also created some light-hearted flavours such as musk sticks, Goody Goody Gum Drops (a silly bubblegum buttercream loaded with jelly lollies) and Rainbow Ice Cream.

Oh, and an important FYI, just like our wholesale range, we’ve kept all the flavours gluten free!

Vegans love cookies too!

In May this year, we launched our new Vegan range, with our popular PB&J and Mint Choc Chip. This new range has been a big success with many people requesting more vegan flavours. Dairy-free sweets lovers can get amongst the action and try one (or all) of our 10 vegan flavours on offer for the day. A personal fave of mine is the Passionfruit, which will be available both in select cafes and at the pop up.
