CHAI BOY BUTTERCREAM

Found at some of Melbourne’s favourite cafés Butterbing cookies are delicious brownie cookie sandwiches. Simone – Miss Butterbing – proudly sources ethical and natural ingredients and has kindly shared her luscious buttercream recipe.
Butter, Unsalted 320g
Chai Tea 20g (we recommend Melbourne’s Chai Boy)
Salt 1/2 tsp
CSR Icing Sugar 260g
Raw Honey 1 tbsp
STEP 01 Blitz chai tea in a spice grinder or food process until fine. Set aside.
STEP 02 Melt butter in microwave until warm, add ground tea, place in fridge overnight.
STEP 03 The next day, remove chai infused and allow to come to room temperature and cube.
STEP 04 Add butter, salt, icing sugar mixture and honey to stand mixer. Incorporate on slow speed before beating on high speed for 5 minutes.
